OK so breakfast is probably the one meal we all neglect, yet it’s the most important. We’re officially all rubbish.
And if you’re anything like me, you struggle to brush your hair on a morning, never mind pimp up you porridge.
So, as a way of attempting a more healthy lifestyle. Here are five breakfast recipes I’m currently trying out using just five(ish) ingredients.
Overnight oats. If you HATE plastic tup-a-wear like me, making overnight oats in a masonry jar is a winner. Pop in your porridge oats, add in some yogurt (and honey of course!), then leave to soak overnight. I bob in fresh fruit in a morning, or the whole thing becomes a little soggy for my liking.
The best thing about it, you just tuck in on a morning, no prep, no faffing, just easy and delicious nutritious food.
Pimped up porridge. If you have a big day ahead and you need to stay full until the afternoon, opting for a nutty granola and banana to pimp your porridge is the one. This is packed with protein and is tasty too. If you want to reduce fat, make your porridge up with water. If you want to add fat, use a nice free-range yogurt to make your porridge up.
Nutty granola and fruit. You can enjoy this with yogurt, milk or just on its own. You can even add orange juice or a smoothie to liven it up. This is filling and tasty and lets you start the day on a good note.
Easy fruit salad. if you’re forever buying fruit and then watching it go out of date, buy frozen berries to fill up your fresh fruit salad. There’s loads of choice and if you leave them in the fridge overnight, they keep your fruit salad nice and cool for when you get to work on a hot day. Plus the juices blend nicely with the fresh fruit to create a delicious breakfast. I tend to use fresh fruit i.e. bananas, grapes and strawberries and then fill it with frozen blueberries and raspberries.
Frozen fruit and fresh yogurt. Towards the end of the week, when I’m running out of fresh fruit, I use yogurt and frozen fruit to pimp up my granola or muesli. I add a dash of honey because I’m a sugar addict, but the fruit should work well for most.
And there you have it, five tasty breakfasts that should take you from Monday to Friday. And – the best bit. You only use a handful of ingredients:
- Yogurt
- Muesli / granola
- Porridge oats
- Fresh fruit
- Frozen fruit
- Honey
If you want to get really fancy you can also add:
- Cinnamon
- Grated apple
- Grated carrot
- Nutmeg
- Vanilla pods
